Stuffed Pepper Casserole…yum!

Diet helpers!
Yesterday I said (again): “Dinner will be roasted chicken, brown rice & brussels sprouts.” Nope! It was Monique’s Stuffed Pepper Casserole…with a couple changes! I used a bit less than 1 pound of the leanest beef I could find (I wanted ground turkey, but the store had none), 2 cups of brown rice, Italian peppers instead of green (I don’t like green peppers, I do like red or orange or yellow ones…but not the extra expense), I added a can of diced tomatoes and substituted a cup of chicken broth for the wine. Mmmm, mmm, good! I also used fat free cheese, which I wouldn’t recommend using. Blech!
Today:
Breakfast: oatmeal, coffee
snack: cashews
Lunch: stuffed pepper casserole & a clementine
Dinner: Not sure, going out to dinner with Lauren

I must agree, fat free cheese is ick. The 2% kind isn’t so bad, but I just love cheese, so it’s hard to make the step down.

We’re trying to eat better this year too and that casserole sounds *good*! I wish that hubby would eat peppers though
I’ve never heard of the Italian ones – are they more palatable (sounds like you don’t like peppers much either)? I don’t mind the 2% cheese, but haven’t tried the fat free yet. I’ll keep the “blech” factor in mind when I do finally

I don’t mind peppers in food but in my mouth they are too strong. (did u want to know that?! too bad now!)

I dont like green peppers either, and fat free cheese is horrible.
Part skim isnt bad though!

Love the diet helpers. We have a couple too. One can actually jump four feet high and snatch a cookie out of an adult hand. Toddlers and small children are just doomed here.

That casserole sounds yummo! I have an evil hankering for smoked Provolone cheese…fat free cheese of any kind just doesn’t do it for me. Now I am craving French Onion Soup…mmm
