First it started with Chef!. Then, I fell in love with The Vicar of Dibley. Now? I’m entranced, utterly and completely, by the British tv show, As Time Goes By. One of the local stations seems to be airing each episode in order; tonight’s is Season 3, Episode 3: Living Together, But Where? I love the give and take between Lionel and Jean; I also love the premise of the show, that they were once young lovers separated during the Korean War who have run into each other much later in life (hmmm…). My friend Pat has always loved this show, just as my cousin, Maribeth, always loved The Vicar of Dibley! It takes me awhile

When I was sick, I kind of fell out of the habit of bringing my lunch to work…so today I got BACK into the habit. Last night I took some of the left over pot roast and shredded it. I caramelized an onion in some olive oil, tossed in some chopped carrots (instead of the holy trinity [onions, peppers, celery], I’m obsessed with this delicious duo), a bit of chicken broth and let that cook down. When the carrots were soft enough, I added a splash of red wine, some balsamic vinegar, a dash of garam masala and a handful of the shredded roast, and stirred it all around. Finally, I added my new best friends, the great northern white beans and simmered for a bit to mix all the flavors. Today I had 3/4 cup of that with 1/2 cup brown rice for lunch. Delicious!
