Last night I made a yummy stir-fry with a little less than a pound (0.83 ounces to be exact) of lean beef, one large green bell pepper, a 20-ounce can of pineapple chunks, 4 chopped carrots, 1 onion and teriyaki sauce, served over brown rice.
I cut the onion in half, then sliced each half thin, cutting it in half again when done. Tossed that into a pan with a bit of olive oil and let it soften and brown just a bit. Then I added the carrots & green pepper and cooked til softened. I cut the beef into small pieces and browned it in a separate pan. When all the redness was gone, I added the drained pineapple (save the juice!) and let that cook for a bit. I added a bit of the pineapple juice to the veggies and steamed them for a bit. Then I added the meat mixture to the veggie mixture, along with some teriyaki sauce, and voila! Twas done, and delicious! Thanks, Faith, for the idea!
You might have noticed I haven’t posted anything about what I’ve been eating for a few days. Well…um…things haven’t been going so well. In fact, I feel a bit like an alcoholic.
When I took the dogs to the beach Saturday, I stopped at Stop & Shop on the way home to pick up some things for dinner. While there, fully knowing I shouldn’t be doing it, I bought a package of chocolate covered pretzels, and proceeded to eat about 14 of them before I stopped. When I got home, I emptied the package under the bird feeder … hopefully it won’t make the squirrels sick!
So…I’ve decided to join Weight Watchers. Maybe I need to be accountable to people I’ll have to look in the face each week. Maybe…
Ironically, I weighed myself this morning (each Wednesday since the initial weigh-in) and I was down 2 pounds. I put on a pair of jeans this morning that I haven’t been able to fit into for awhile. Maybe all this walking (at least once a day for 25 minutes) is helping…

Wow, this is GREAT:
“Everyone has the right to own a pet, but they also have the obligation to raise the pet for its whole life,” the company said, explaining why it had decided to offer employees who own dogs and cats a “family allowance” of 1,000 yen ($9) per month.
What a fantastic idea. It’s not an outrageous amount, just $108.00/per year, but if you put that towards vet bills or food…every little bit helps!

While I was out walking Wolf yesterday (the first time) I shot this picture (and a few steps later, tripped over something hidden in the snow and fall flat on my face…with the camera held up high LOL). The second time I took Wolf out, I had a conversation with the guy who lives in the house next to this barn…and found out it doesn’t belong to him (I’m sure I knew this at some time but forgot, being old and whatnot). It belongs to a guy who lives up the street, who is quite controversial for wanting to cut down the woods behind his house and build an over 55 complex. So far, he’s not been able to get the ok from the town, which is good, because I doubt the road we live on could handle it.

Bombay fish curry with brown rice & quinoa…YUM!

Breakfast: Barley hash with quinoa, coffee
Snack: raw almonds,
bad thing: one piece of chocolate
Lunch: See above, plus mango green tea
Dinner will be ground turkey sauteed with mushrooms, carrots, onion and served over the brown rice/quinoa combination. Or maybe Cincinnati Chili. I can’t decide!
I was up til 1230 or thereabouts reading the new book…combine New Orleans, France, recipes and a lost soul and it’s quite hard to put down!
Oh…and I lost three pounds since last Wednesday. I’d be VERY happy with 6 pounds a month for the next 9 months. Doesn’t seem unrealistic…

Iced rocks at Salisbury Beach
Took Dad out for breakfast, then took the dogs up to the beach. Still feeling energetic, and the dogs had a GREAT time playing with a Keeshond!
Breakfast: coffee, egg beaters w/swiss cheese (one slice), mushrooms, spinach & salsa, a slice of buttered bread, a few home fries w/ketchup
Snack: Cashews
Lunch: thin slice of pizza & clementine, coffee with milk & equal
Dinner: 1/2 cup of the pepper casserole, some almonds, a tangerine, fat free ricotta with cinnamon & equal for dessert

Diet helpers!
Yesterday I said (again): “Dinner will be roasted chicken, brown rice & brussels sprouts.” Nope! It was Monique’s Stuffed Pepper Casserole…with a couple changes! I used a bit less than 1 pound of the leanest beef I could find (I wanted ground turkey, but the store had none), 2 cups of brown rice, Italian peppers instead of green (I don’t like green peppers, I do like red or orange or yellow ones…but not the extra expense), I added a can of diced tomatoes and substituted a cup of chicken broth for the wine. Mmmm, mmm, good! I also used fat free cheese, which I wouldn’t recommend using. Blech!
Today:
Breakfast: oatmeal, coffee
snack: cashews
Lunch: stuffed pepper casserole & a clementine
Dinner: Not sure, going out to dinner with Lauren
